Meatloaf Mishaps

Sometimes, it feels like you just can’t do anything right. I’ve had a few comedy of errors moments lately, but was confident that I could handle the meat loaf making for our dinner one night. Michelle asked that I make her verison vs my version, which is fine. Her ‘version’ was written on a little piece of paper as such:   1lb hamburger saltines, crushed salt and pepper 1/4 cup brown sugar 1/4 cup ketchup   Now, my meatloaf looks pretty much the same (plus some spice) outside of the last two. AKA I don’t top my meatloaf.  She obviously does. How Christopher Proposed – Michelle’s Version

Christopher proposed to me Friday December 9th, 2011. But before I can tell you the rest of the story I must back up to an earlier time. We had gone ring shopping in Sioux Falls, SD one Saturday in November. We found my ring at the first jewelery store we looked at. It also happened to be the first ring I tried on. The engagement ring had been in the store waiting for us for over four years. I was headed home to South Dakota that weekend and I was excited for once we had nothing pressing on the agenda beyond baking cookies for the cookie exchange that was happening at work on Monday. A New Uthe Family Favorite

Christopher and I decided to invite Kathy and Wayne to dinner one Saturday night. I had recently cooked a whole chicken (minus neck and giblets) in the crock pot. As you can see we are all about cooking in the crock pot because of the ease of use. The 4lb chicken was frozen in the freezer. I quickly thawed the chicken enough to remove the wrapper and other packaging by placing the chicken in the sink and filling it with warm water. Removed the chicken after 15 minutes in the warm water. Removed the wrapper and placed it in the crock pot. Covered the chicken and cooked on high for 6hrs, basically while we were gone at the aquarium society frag swap. When we got home the chicken was done. Slow Cooker Ham – R&D

Christopher and I made a ham for Christmas last year in addition to a Turkey with all the trimmings; however, the ham (a generic pre-cooked from Cub Foods) was lacking some flavor.  We warmed the ham in a crock pot with a small amount of liquid and it only took a couple of hours but lacked flavor and drippings for ham gravy. I was very disappointed, and vowed to make  next years better as ham gravy is one of my favorite kinds of gravy.  So in preparation for making another ham for a family function, we bought a ham at Hy-vee. It was a Hy-vee Ham, labeled pork shoulder “with bone”. We put this Ham in the crock pot around two  p.m. with a little extra liquid and baked it on high for four hours. How I Fell In Love – Chris’ Story

I met my fiance Michelle a long time ago, but I re-met her a year and a half ago. Our chemistry was undeniable from the outset: I’m a constant goof, with serious spurts that made her laugh more than the goofy parts. She was ever serious with an undeniable flair for the extra goofy during her less guarded moments. Our dear younger sisters pulled as many little sister tricks as possible, and pushed us together over a couple weekends in the summer of 2010. After a wonderful first date at the MN State Fair our love blossomed over a period of 18 months, one weekend at a time.
